Looking for something to do with all the chicken you got on sale?
This is a good option, especially if it’s cold outside.
Put 1-2 cups diced chicken in a pot.
Add 1 tsp. cumin, 1 tsp. garlic powder, and 1 tsp. salt.
Then add 1 cup salsa,
1 can cream of chicken soup and 1 soup can of water.
Next add a 12-oz. bag frozen corn and
a 14.5-oz. can of black beans. I had cooked a bag of dried black beans and frozen them, so that is what I used. Either works great. The dried ones will save you a bit of money.
Next comes 1 can Rotel diced tomatoes and green chilies and
1/2 cup sour cream.
Now stir all these ingredients together and simmer on low until heated through. This also does nicely in a crock pot if you need to leave it unattended.
I recommend garnishing with fresh cilantro, shredded cheddar and a little more sour cream.
And, of course, soup tastes best if you double the recipe and share it with friends.
